Ingredients
- For Cakes
- 2lbs fresh salmon fillets(broiled, grilled, poached, etc, but lightly seasoned), crumbled and cooled
- 2 cups mashed potatoes
- 2 eggs
- 3 green onions, chopped
- 1 bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 4oz soft goats cheese
- juice from 1/2 lime
- 1T Dijon
- 2t Old Bay
- kosher or sea salt and fresh ground pepper
- 1 cup Panko bread crumbs
- *1/3 cup fine bread crumbs(optional-I don't use these)
- canola or peanut for frying
- For Sauce
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- juice from 1 lime
- 1T sesame seeds, toasted
- salt and pepper
Description
A Fairly Classic "salmon Patty" Made With Left Over Mashed Potatoes, But This One Uses Fresh Salmon And A Nice Bite With The Goats Cheese. These Are Nice Simply Served With Fresh Cucumber And Tomato Slices.
