Ingredients
- 5 chicken drumsticks, or whatever parts of chicken you may have handy
- 2 Large white potatoes, peeled and cubed
- 3 Large carrots, peeled and coined
- 1/2 Jumbo spanish onion, coarsely chopped
- 1 -14.5 oz can of diced tomatoes
- 1 Cup water or chicken broth
- 1/4 Cup coconut milk
- 3-4 garlic cloves, minced
- Fistful of Whole cardamom seeds
- 3 Tbsp Vindaloo curry
- 1 Tbsp parsley
- 1 tsp of each: ground ginger, white pepper, smoked paprika (cos I put this $#!t in everything) marjoram, turmeric, onion powder, cinnamon, ground cloves, cumin
- 1/2 tsp cayenne powder
- 2 bay leaves
- 1 1//2 Tbsp corn Starch, for thickening (Optional)
