Ingredients

  • 2 tsp grnd coriander
  • 1 tsp grnd cardamom
  • 1 tsp grnd cayenne pepper
  • 1 tsp grnd cumin
  • 1 tsp turmeric
  • 1 tsp freshly grnd black pepper
  • 2 tsp salt, plus more to taste
  • 4 lb beef shanks, cut 1 1/2 to 2 inches thick
  • 3 Tbsp. peanut oil
  • 3 c. minced onions
  • 2 x carrots cut into 1/4 inch dice
  • 4 x garlic cloves, chopped
  • 2 Tbsp. chopped fresh ginger
  • 2 c. low-sodium chicken stock
  • 1 1/2 c. unsweetened coconut lowfat milk
  • 1 stalk lemongrass, tough outer part removed, tender center very thinly
