Ingredients
- 1.5 lb flank steak
- 2 tsp chili powder
- 1 tsp kosher salt or salt
- 1 tsp instant expresso powder(I used inst. coffee)
- ½ tsp garlic powder
- ½ tsp dried oregano of marjoram crushed
- ½ tsp ground black pepper
- green chili Pesto
- Halve 2 medium fresh Anaheim of poblano chile peppers lengthwise; remove stems and seeds. Coarsely chop peppers. In food processore combine peppers ½ cup of fresh cilantro, ¼ cup crumbled Cotija cheese(you can substitute), 2 Tbl. Of pine nuts(I used toasted pecans), 1 clove of garlic, ¼ tsp crushed red pepper flakes, salt and black pepper to taste. Process to finely chop mixture. With processor running, add 1/3 cup olive oil in steady stream through feed tube to combine into a coarse paste.(less is better than more)
