Penne Chile Recipe

Ingredients

  • 2lbs lean meat(bison, deer, elk, and maybe even chicken or turkey)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2-4 fresh jalapenos, minced(deseeded, if desired)
  • 28oz diced tomatoes(can use a Mexican or chili ready variety, if desired)
  • 28oz red, kidney or chili beans, undrained
  • 1/3 cup chili powder(more or less, depending on your tomato/bean seasoning....use half, then add more the last half hour of cooking, if needed)
  • 1T quality paprika(I used smoked)
  • 2t ground cumin
  • 2t ground coriander
  • 2t dried Mexican oregano
  • 1T worcestershire sauce
  • 1t liquid smoke
  • 1/4 cup red wine vinegar
  • 2-3T honey
  • 1/2 bottle good beer
  • 1 cup beef broth(reserve 2 more, if cooking pasta in the slow cooker, too)
  • kosher or sea salt and fresh ground black pepper.... or, your favorite spice blend with pepper and salt :) Lots of tomatoes and beans, here... you'll need salt
  • 1lb penne or similar pasta
  • Garnishes
  • sour cream
  • shredded cheese
  • green onions

Description

This Is My Version Of 'chili Mac' Done In The Slow Cooker. Even The Pasta Can Be Added At The End Of Cooking To Simplify It Even More..or, Just Cook The Pasta At The End Of Cooking And Serve It Together. This Ends Up Being A Pasta Dish With A Chili Sauce
