- 8 medium carrots, trimmed, peeled, halved and par boiled
- salt and pepper
- dried chilli
- cumin
- 4 garlic cloves
- fresh thyme leaves
- olive oil (about 1/4 cup)
- vinegar of your choice
- 1 orange, halved
- 1 lime, halved
- 4 avocadoes peeled and quartered
- assorted salad leaves (rocket, radicchio etc)
- 4 slices toasted ciabatta (or any other bread you have handy) torn into chunks
- yoghurt for dressing
