Ingredients
- 1 ripe avocado
- 2 to 3 tbsp fresh lime juice
- 1 ripe red tomato
- 1 ear sweet corn
- 1 scallion, fine dice - or fine dice sweet onion
- 1 to 2 jalapeno peppers - seeded and minced
- 1/4 cup chopped fresh cilantro (I hate cilantro so I leave this out)
- coarse salt and freshly ground black pepper
