Ingredients
- 1 ripe avocado
- 1/2 red onion, chopped
- 1 tsp lemon or lime juice
- 1 clove garlic, minced (optional)
- 1 small tomato, chopped and seeded
- any other veggies you'd like to add (my favourite is some sauteed mushrooms)
- 1/4 cup shredded cheddar cheese
- 4 slices swiss cheese
- 4 slices egg or Italian bread (anything that's thicker than regular out-of-the-bag sliced bread will do)
