Coconut Moong Recipe

Ingredients

  • 1 & 1/2 cups whole dried mung beans
  • 1 can coconut milk
  • 4 cups chicken or veggie broth
  • 1 large yellow onion, diced
  • 2 large garlic cloves, minced
  • 1/2 cup white wine vinegar
  • 2 tbsp ground cumin
  • 2 tbsp ground turmeric
  • 2 tbsp ground coriander
  • 1 tbsp ground ginger
  • 1 tsp ground cinnamon
  • salt & ground black pepper, to taste
  • coconut oil

Description

This Creamy, Thick, Soup-like Dish Is Delicious Served Over Rice! Made With Mung Beans And Coconut Milk, It Is Very Similar To The Indian Dish "moong Dal" (which Has Many Varieties), But I Used Whole Mung Beans Instead Of The Traditional
