  • Confectioners sugar for dusting

  • 3/4 cup shelled pistachios
  • 3/4 cup sugar, divided
  • 5 egg yolks
  • 1-3/4 cups milk
  • Zest of one lemon
  • 1/4 cup water
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla
