Ingredients

  • red pepper-BASIL SAUCE WITH BALSAMIC VINEGAR:
  • 1 1/2 tablespoons olive oil
  • 1 small onion , chopped
  • 1 large red bell pepper , cored, seeded, and chopped
  • 1/2 cup low-sodium chicken broth
  • 1 medium clove garlic , minced
  • 1/4 cup shredded fresh basil leaf
  • 1 - 2 teaspoons balsamic vinegar
  • TOMATO-rosemary CREAM SAUCE:
  • 1 tablespoon olive oil
  • 2 medium shallots , minced
  • 1 large tomato , peeled, seeded, and chopped
  • 3 tablespoons dry white wine or dry vermouth
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup heavy cream
  • 1/4 teaspoon minced fresh rosemary , or heaping 1/4 teaspoon dried rosemary, pulverized
  • porcini mushroom SAUCE WITH CREAM:
  • 3 tablespoons unsalted butter
  • 1 medium onion , minced
  • 2 ounces dried porcini mushrooms , rehydrated in 2 cups hot water, strained, and chopped coarse; soaking liquid reserved
  • 6 tablespoons heavy cream
  • 3 tablespoons minced fresh parsley leaves
  • TWO mushroom SAUCE WITH ROSEMARY:
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium onion , minced
  • 2 medium cloves garlic , minced
  • 1 teaspoon minced fresh rosemary
  • 1 pound white button mushrooms , stems trimmed and sliced thin
  • 1 ounce dried porcini mushrooms , rehydrated, strained, and chopped coarse; soaking liquid reserved
  • 2 tablespoons minced fresh parsley leaves
  • tomato sauce WITH PORCINI MUSHROOMS:
  • 3 tablespoons olive oil
  • 1 medium onion , minced
  • 1 rib celery , minced
  • 1 small carrot peeled and minced
  • 1 ounce dried porcini mushrooms , rehydrated, strained, and chopped coarse; soaking liquid reserved
  • 1 teaspoon table salt
  • (28 ounce) can whole tomatoes (preferably plum), packed in juice, drained, seeded, and chopped
  • pasta WITH FRESH clam SAUCE: Serves 4
  • 40 littleneck clams (the smaller the better), or 3 pounds cockles, or 24 littleneck clams and 6 quahogs (the larger the better), all scrubbed thoroughly
  • 1/2 cup dry white wine
  • Pinch cayenne pepper
  • 1/4 cup extra-virgin olive oil
  • 2 medium cloves garlic , minced
  • 1 large plum tomato or 2 small plum tomatoes, peeled, seeded, and minced
  • table salt
  • 1 pound spaghetti or linguine, or other long-strand pasta
  • 3/4 cup chopped fresh parsley leaves
  • 3 tablespoons minced fresh parsley leaves
