Albondigas Recipe

Ingredients

  • 1- 2 pounds of lean ground beef
  • 1 egg
  • 4-6 cups of water or beef stock
  • 3 carrots, cut into chunks
  • 3 celery, chopped
  • ½ onion, sliced into rings
  • 2 cloves of garlic, minced
  • 1- 10 oz. can of Rotel tomatoes
  • 1 small can of tomato sauce
  • 3/4 cup of long grain rice
  • cumin to taste
  • oregano to taste
  • 2-3 cubes of beef boullion cubes
  • pepper to taste
  • 2 tbs. olive oil
