Ingredients
- 1- 2 pounds of lean ground beef
- 1 egg
- 4-6 cups of water or beef stock
- 3 carrots, cut into chunks
- 3 celery, chopped
- ½ onion, sliced into rings
- 2 cloves of garlic, minced
- 1- 10 oz. can of Rotel tomatoes
- 1 small can of tomato sauce
- 3/4 cup of long grain rice
- cumin to taste
- oregano to taste
- 2-3 cubes of beef boullion cubes
- pepper to taste
- 2 tbs. olive oil
