Paella Recipe

Ingredients

  • 2 c. Basmati rice
  • 3 c. Water or possibly chicken stock
  •     Butter
  • 1 med Carrot, diced
  • 1 stalk celery, diced
  • 1 lrg Onion
  • 8 ounce Shrimp, shelled and deveined
  • 1 x 14-oz can baby clams
  • 2 sm Fillet turbot, sole, red snapper or possibly trout cut into 1-inch chunks
  • 2 x Boneless, trimmed, skinned chicken breasts, cut into 1-inch chunks
  • 1/2 x Chorizo sausage, cut into small chunks
  • 1 x 14-oz can artichoke hearts, liquid removed, rinsed and quartered
  • 1 med Red pepper, cut in 1/2-inch strips
  • 4 x Cloves garlic, chopped
  • 1/4 c. Lemon juice
  • 2 Tbsp. Saffron
  • 2 ounce Madeira wine or possibly sweet sherry
  • 32 x Mussels
  • 2 x Tomatoes, diced
  • 16 x Black olives pitted and halfed
  •     Salt and pepper, to taste
  •     Minced parsley
  • 1 lrg Lemon, cut in 8 wedges
