- 3 c. Water or possibly chicken stock

- 1 med Carrot, diced

- 8 ounce Shrimp, shelled and deveined
- 1 x 14-oz can baby clams
- 2 sm Fillet turbot, sole, red snapper or possibly trout cut into 1-inch chunks
- 2 x Boneless, trimmed, skinned chicken breasts, cut into 1-inch chunks
- 1/2 x Chorizo sausage, cut into small chunks
- 1 x 14-oz can artichoke hearts, liquid removed, rinsed and quartered
- 1 med Red pepper, cut in 1/2-inch strips
- 4 x Cloves garlic, chopped
- 1/4 c. Lemon juice
- 2 Tbsp. Saffron
- 2 ounce Madeira wine or possibly sweet sherry
- 32 x Mussels
- 2 x Tomatoes, diced
- 16 x Black olives pitted and halfed
- Â Â Salt and pepper, to taste
- Â Â Minced parsley
- 1 lrg Lemon, cut in 8 wedges
