- 1 medium sweet yellow onion, finely chopped
- 1/2 red bell pepper & 1/2 green bell pepper, peeled, finely chopped
- 1/2 a large can of Muir Glen fire roasted tomatoes, diced
- 2 whole roasted green chiles, diced
- 2 cans organic navy beans, undrained
- 2 cans organic red beans, undrained
- seasonings (all to taste):
- kosher salt, black pepper, cumin, organic taco seasoning, chili powder, dried Mexican oregano, red wine vinegar
- fresh corn and chive Dumplings:
- 1 cup all-purpose flour
- 2 tablespoon yellow cornmeal
- 2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 1 tablespoon granulated sugar
- 2 tablespoons cold, unsalted butter
- 1/2 cup corn kernels, fresh
- a few tablespoons snipped fresh chives
- half & half, as needed
