Scalloped Cauliflower Recipe

Ingredients

  • 2 lbs. cauliflower, cut into small florets
  • 2/3 c. grated cheese, such as gruyere, aged Cheddar, or parmigiano Reggiano (I suggest the Parm)
  • 1/2 tsp. ground nutmeg or 1 TBSP. Dijon mustard (I use the nutmeg)
  • Bechamel Sauce:
  • 1 3/4 c. plus 2 TBSP milk
  • 1/4 of a small onion
  • 1 bay leaf
  • 2 whole cloves
  • 3 TBSP. butter
  • 3 TBSP. all-purpose flour
  • salt and ground white pepper, to taste
  • Topping:
  • 1/2 c. breadcrumbs, fresh or panko
  • 2 TBSP butter, melted
  • paprika
