Ingredients
- 2 lbs. cauliflower, cut into small florets
- 2/3 c. grated cheese, such as gruyere, aged Cheddar, or parmigiano Reggiano (I suggest the Parm)
- 1/2 tsp. ground nutmeg or 1 TBSP. Dijon mustard (I use the nutmeg)
- Bechamel Sauce:
- 1 3/4 c. plus 2 TBSP milk
- 1/4 of a small onion
- 1 bay leaf
- 2 whole cloves
- 3 TBSP. butter
- 3 TBSP. all-purpose flour
- salt and ground white pepper, to taste
- Topping:
- 1/2 c. breadcrumbs, fresh or panko
- 2 TBSP butter, melted
- paprika
