Turkey And Parsnip Curry Recipe

Ingredients

  • 2 tablespoons vegetable oil
  • 2 onions, halved and thinly sliced
  • 500g (a couple of ounces over a pound) parsnips, peeled and cut into chunks
  • 5 tablespoons Korma paste (we use Patak's). I reckon you could use any curry paste you like but this goes well with the coconut milk.
  • 1 14 oz. can chopped tomatoes
  • 1 14oz. can coconut milk
  • 500g cooked turkey (again, a little over a pound)
  • Any other vegetables or pulses you have and wish to use up!
