Asian-style Chicken Noodle Soup Recipe

Ingredients

  • 2 1/2 cups low sodium chicken broth
  • 1 1/4 cups water
  • 2 green onions -- thinly bias-sliced
  • 2 teaspoons low sodium soy sauce
  • 2 cloves garlic -- minced
  • 1/4 teaspoon five-spice powder
  • 1/8 teaspoon ground ginger
  • 2 cups bok choy -- chopped
  • 1 medium red bell pepper -- thinly sliced into strips
  • 2 ounces somen noodles -- broken into 2" lengths, or 2 ounces dried fine noodles, i.e. angel hair
  • 1 1/2 cups cooked chicken -- chopped

Description

Using Leftover Chicken Makes This Dish Quick & Simple. Other Options -- Add In Shrimp Or Thin Slices Of Cooked Pork, Or Any Veggies Of Choice, I.e. Snow Peas, Carrots, Etc.
