Cornbread Stuffed Pork Loin And Peach Whiskey Sauce Recipe

Ingredients

  • 4-5lb pork roast, butterflied and pounded or "sliced and rolled" out to about 1/2 inch thickness(there are great online videos with how to do this, if you need help, or ask your butcher)
  • 1 stick butter
  • 1 onion, diced
  • 3 stalks celery, diced
  • 3 cloves garlic, minced
  • 12oz fresh mushrooms, chopped
  • 8oz fresh spinach, roughly chopped
  • 4-5 medium to large fresh sage leaves
  • 4 cups corn bread cubes or crumbs
  • 2T melted butter or olive oil
  • kosher or sea salt and fresh ground pepper
  • For fresh peach Sauce
  • 5 fresh peaches, pitted and sliced(I didn't bother peeling)
  • 1/2 stick butter
  • 1/4 cup honey
  • 1/2 cup whiskey
  • juice from 1 lime or 1/2 lemon
  • 1T dry mustard
  • 1/4-1t cayenne
  • 2t smoked paprika
  • kosher or sea salt(I used applewood smoked) and fresh ground pepper
