Ingredients
- 4-5lb pork roast, butterflied and pounded or "sliced and rolled" out to about 1/2 inch thickness(there are great online videos with how to do this, if you need help, or ask your butcher)
- 1 stick butter
- 1 onion, diced
- 3 stalks celery, diced
- 3 cloves garlic, minced
- 12oz fresh mushrooms, chopped
- 8oz fresh spinach, roughly chopped
- 4-5 medium to large fresh sage leaves
- 4 cups corn bread cubes or crumbs
- 2T melted butter or olive oil
- kosher or sea salt and fresh ground pepper
- For fresh peach Sauce
- 5 fresh peaches, pitted and sliced(I didn't bother peeling)
- 1/2 stick butter
- 1/4 cup honey
- 1/2 cup whiskey
- juice from 1 lime or 1/2 lemon
- 1T dry mustard
- 1/4-1t cayenne
- 2t smoked paprika
- kosher or sea salt(I used applewood smoked) and fresh ground pepper
