Mean Mr. Mustard Sleeps In The Pork - Pork Roulade Dijonaise Recipe

Ingredients

  • 2 lbs. of pork tenderloin
  • 3/4 lb. of fatty ground pork
  • 1 egg
  • ½ cup of coarse fresh bread crumbs
  • 2 cups of thinly sliced cremini mushrooms
  • 5 large shallots (sliced thinly)
  • 4 tbls. of course Dijon style mustard
  • Fresh finely chopped rosemary, thyme and parsley
  • salt, black pepper
  • ---Sauce---
  • 3 cups of rich beef stock
  • 3 cups of a good Beaujolais or Pinot Noir
  • 6 cloves of garlic (smashed)
  • 2 proper cloves
  • 1/3 of a cinnamon stick
  • 4 bay leaves
  • 1 cup of mixed celery, carrot and leek
  • 4 pieces of bacon
  • 1 tsp. of black pepper corns
  • 5 tbls. of softened butter
  • salt
