Ingredients
- 2 lbs. of pork tenderloin
- 3/4 lb. of fatty ground pork
- 1 egg
- ½ cup of coarse fresh bread crumbs
- 2 cups of thinly sliced cremini mushrooms
- 5 large shallots (sliced thinly)
- 4 tbls. of course Dijon style mustard
- Fresh finely chopped rosemary, thyme and parsley
- salt, black pepper
- ---Sauce---
- 3 cups of rich beef stock
- 3 cups of a good Beaujolais or Pinot Noir
- 6 cloves of garlic (smashed)
- 2 proper cloves
- 1/3 of a cinnamon stick
- 4 bay leaves
- 1 cup of mixed celery, carrot and leek
- 4 pieces of bacon
- 1 tsp. of black pepper corns
- 5 tbls. of softened butter
- salt
