Roasted Tomato And Mushroom Pasta Sauce Recipe


  • 2 lbs tomatoes (Roma, cherry, Campari)
  • 10 oz white or cremini mushrooms
  • 1 medium onion, cut in wedges
  • 5 cloves garlic
  • 2 Tbsp olive oil
  • salt & pepper
  • 1/4 cup basil leaves, chopped
  • 4 slices bacon
  • 1 tbsp butter
  • 1 cup cream or half & half
  • parmesan cheese


Roasted Tomatoes, Mushrooms, Garlic And Onion Are Pureed Then Simmered With A Little Butter, Cream And Some Crumbled Bacon To Make A Rich, Creamy Sauce That Suits A Variety Of Pasta. Fat Free Half And Half And Turkey Bacon Can Be Used To Lighten It Up.
