Swiss Chard Mac And Cheese Recipe

Ingredients

  • 1 large bunch swiss chard leaves, well cleaned and sliced into ribbons
  • 1/2 pound whole wheat pasta (I used rotini)
  • 4-6 garlic cloves, chopped
  • 1 leek, white and light green parts, chopped
  • 2 Tablespoons olive oil
  • 2 Tablespoons butter
  • 2 Tablespoons flour
  • 2 cups chicken or vegetable stock
  • 2 cups milk (I used 1% and it was just fine)
  • 3 cups grated cheddar cheese (divided)
  • 1/2 cup grated parmesan cheese (divided)
  • 1 cup fresh bread crumbs
  • salt
  • pepper
  • nutmeg
