Russian Borscht Recipe

Ingredients

  • 2 cups tomato juice
  • 1 cup carrot juice
  • 1/2 cup of cucumber
  • 1/2 cup celery juice
  • 1/2 cup lemon juice
  • 2 Tablespoons honey.
  • 1/4 cup sundried tomatoes, rehydrated
  • 1/4 cup red pepper, chopped
  • 1 medium cucumber, chopped
  • 3 scallions, chopped
  • 1 avocado, peeled and chopped
  • 1 cup tomatoes, diced
  • 1/4 cup fresh parsley, chopped
  • dash of cumin
  • dash of salt
  • dash of cayenne pepper
