Ingredients
- 1-2 tbsp olive oil
- 1 sweet yellow onion, diced
- 2 carrots, diced
- 3 oz of pancetta, chopped
- 4 cloves of garlic, minced
- sea salt and freshly cracked pepper, to taste
- 1 tbsp tomato paste
- 1 14 oz can of diced tomatoes, with juice
- 2-3 cups of fresh kale, chopped
- 1 15 oz can of white cannellini beans, drained and rinsed
- 1 tsp dried basil
- 1 tsp dried oregano
- 6 cups of chicken broth (I used homemade).
- 1 bay leaf
- 2 inch piece of Parmesan rind
- 1 cup whole wheat spaghetti, broken into 1 inch pieces
- Grated Parmesan, for serving
