Ribollita Recipe

Ingredients

  • 1-2 tbsp olive oil
  • 1 sweet yellow onion, diced
  • 2 carrots, diced
  • 3 oz of pancetta, chopped
  • 4 cloves of garlic, minced
  • sea salt and freshly cracked pepper, to taste
  • 1 tbsp tomato paste
  • 1 14 oz can of diced tomatoes, with juice
  • 2-3 cups of fresh kale, chopped
  • 1 15 oz can of white cannellini beans, drained and rinsed
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 6 cups of chicken broth (I used homemade).
  • 1 bay leaf
  • 2 inch piece of Parmesan rind
  • 1 cup whole wheat spaghetti, broken into 1 inch pieces
  • Grated Parmesan, for serving
