Greco - Roman Pasta Recipe

Ingredients

  • 1lb rotini or penne pasta
  • 1pt cherry tomatoes, halved
  • about 1lb fresh baby spinach leaves, roughly torn
  • 1 red onion, cut into thin wedge slices
  • 1/4 cup white wine
  • 1 roasted red pepper, diced
  • 3 cloves garlic
  • 1/2 stick butter(can sub half olive oil)
  • 1 lemon
  • 8oz feta cheese
  • 1t ground coriander
  • 1T fresh thyme, chopped(or 1t dried)
  • 1t dried oregano(or sub fresh... I only use dry because I prefer Mexican oregano, and I don't grow it :)
  • kosher or sea salt and fresh ground pepper
  • grilled chicken breasts, chopped or cut into strips. (just use a simple marinade of lemon juice, garlic and a lil italian seasonings, then grill til done)--optional
