Ingredients
- 1lb rotini or penne pasta
- 1pt cherry tomatoes, halved
- about 1lb fresh baby spinach leaves, roughly torn
- 1 red onion, cut into thin wedge slices
- 1/4 cup white wine
- 1 roasted red pepper, diced
- 3 cloves garlic
- 1/2 stick butter(can sub half olive oil)
- 1 lemon
- 8oz feta cheese
- 1t ground coriander
- 1T fresh thyme, chopped(or 1t dried)
- 1t dried oregano(or sub fresh... I only use dry because I prefer Mexican oregano, and I don't grow it :)
- kosher or sea salt and fresh ground pepper
- grilled chicken breasts, chopped or cut into strips. (just use a simple marinade of lemon juice, garlic and a lil italian seasonings, then grill til done)--optional
