My Kinda Fajita Recipe

Ingredients

  • 1 eggplant, cut lengthwise into 1/4-inch thick slices
  • 1 zucchini, cut lengthwise into 1/4-inch thick slices
  • 1 red pepper, cut into wedges
  • 1 bunch scallions
  • 8-6 in. flour tortillas
  • 2 cups pepper jack cheese, shredded
  • seasoned butter
  • 1/2 stick butter
  • 2 tbls. cilantro, chopped
  • 1 tsp. chili powder
  • 1 tsp. salt
  • 1/4 tsp. ground red pepper
  • 2 tbls. lime juice, fresh
  • salsa and sour cream to garnish
