- 2 C fresh or frozen corn
2 C zucchini, cubed
2 C yellow squash
2 C eggplant, cubed
2 medium green peppers, chopped
2 medium red peppers, chopped
2 large onions, chopped
1 bulb garlic
1/4 C olive oil
3 qt. veggie broth
2 14 oz cans stewed tomatoes
2 14 oz. cans tomato puree
1/4 C lime juice (1 lg. lime)
4 t chili powder
1 1/2 t cayenne powder
1 t cumin
1/2 C butter
1/2 C flour
3 15 oz cans white kidney beans (not navy)
1/2 C fresh cilantro, minced
