The Gypsy Stew Recipe

Ingredients

  • 3/4 cup pearl barley, rinsed and drained
  • 5-1/2 cups water
  • 1-1/2 teaspoons salt
  • 1/4 cup olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1/4 cup flour
  • 1/2 cup red wine
  • 2 tablespoons soy sauce
  • 2 teaspoons paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • 2 potatoes, peeled and cut into bite-sized pieces
  • 3 large carrots, peeled and chopped
  • 1-1/2 cups green beans, trimmed and cut into 1-inch lengths
  • 2 cups broccoli florets (about 1 small head)
  • 2 cups coarsely sliced cabbage (about 1/4 head)
  • 3 cups spinach, washed and dried
