- 1/2 cup red wine
- 2 tablespoons soy sauce
- 2 teaspoons paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- 2 potatoes, peeled and cut into bite-sized pieces
- 3 large carrots, peeled and chopped
- 1-1/2 cups green beans, trimmed and cut into 1-inch lengths
- 2 cups broccoli florets (about 1 small head)
- 2 cups coarsely sliced cabbage (about 1/4 head)
- 3 cups spinach, washed and dried
