Oyster Stew Recipe

Ingredients

  • 2 slices bacon, diced
  • 1/2 cup butter
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 1 garlic clove, crushed
  • 3 tablespoons flour
  • salt
  • fresh ground black pepper
  • 1 pinch cayenne
  • 1/2 teaspoon dried thyme
  • 1 (8 ounce) bottle clam juice
  • 1/4 cup dry sherry or a dry white wine
  • 1 1/2 cups heavy cream
  • 1 (12 ounce) can evaporated milk
  • 1 pint shucked oysters, with their liquor
  • few dashes of worcestershire sauce
  • 1/2 cup parsley, finely chopped

The Best Oyster Stew I Have Eaten Was At Christians In New Orleans. This Is As Close As I Can Get. I Save This One Until Christmas Eve.
