- 2 Tbsp blackstrap molasses
- 1/2 cup corn syrup or golden syrup
- 1/2 cup orange marmalade
- 1 1/2 cup flour
- 2 eggs, beaten
- 1 cup grated suet
- 1 cup brandy
- 1 cup strong ale like guinness
- 1 cup almonds or pecans, chopped finely
- 1/2 tsp each of nutmeg, allspice, cinnamon, pumpkin pie spice and ground ginger
- 1 cup dark brown sugar
- 1/2 cup shredded carrots
- 1 tsp vanilla extract
- 1/2 cup each of orange and lemon juice
