Mediterranean Salad Vegetarian Recipe

Ingredients

  • ½ lb. orzo, cooked, rinsed, and really really well-chilled. Really.
  • 1 15-oz. can of garbanzo beans
  • 4 tomatoes, cut into eighths, or
  • 1 pint sweet cherry tomatoes, halved
  • 1 cucumber, peeled, halved, sliced
  • 1 bunch scallions, sliced thin
  • ¼ lb. olives
  • ½ feta cheese, not crumbled much
  • *Combine these ingredients for the dressing:
  • ¼ c. lemon juice (at least)
  • ½ c. olive oil
  • 2 T chopped parsley
  • 2 T chopped fresh marjoram
  • ½ c. julienned basil (at least)
  • 2 T red wine vinegar
  • salt to taste, and the merest pinch of sugar, not honey
  • Pile on a bed of arugula or red leaf lettuce or baby greens.

This Is So Refreshing And Satisfying! After I Had Had A Surgery And My GI Tract Was Very Delicate, This Put Me Right When Nothing Else Would.
