Ingredients
- 12 large eggs
- 2 tbsp olive oil
- 1 tbsp butter
- 1 lb potatoes cut into a dice no larger than 1/2-inch
- 1 large onion, diced
- fresh chopped herbs; try thyme, maybe oregano, fresh cilantro on top perhaps, always flat-leaf parsley. Match the herbs to the ingredients you have on hand.
- salt to taste
- freshly ground pepper to taste
- 1 cup grated cheese (gruyere is a personal favorite)
- Any other ingredients you have on hand; try crumbled bacon, or leftover veggies. Anything really.
