Mini Christmas Puddings Recipe

Ingredients

  • 5 oz each currants, raisins and sultanas
  • 5 oz dates, chopped
  • 5 oz prunes, chopped
  • 3 fl oz Cointreau
  • 3 fl oz stout (dark beer)
  • Finely grated zest and juice of 1 orange
  • 6 oz butter, plus extra to grease
  • 6 oz molasses sugar
  • 3 medium eggs, beaten
  • 3 oz self-raising flour, sifted
  • 1 level tbsp ground mixed spice
  • 1 carrot (about 3 oz), grated
  • 5 oz fresh white breadcrumbs
  • 3 oz blanched almonds, toasted and chopped
  • 2 oz pecans or walnuts, toasted and chopped
