Ingredients
- 1 cup sugar
- 1/2 cup margarine* (I used butter)
- 1 egg
- 2 cups flour* (I used whole wheat flour)
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon cloves
- 1/4 teaspoon salt
- 1 cup grated raw zucchini, unpeeled
- 1 cup raisins
- 1 cup chopped nuts (I used almonds, but I'll use pecans next time)
- 4 tablespoons carrot puree* (I used whole wheat flour, I think the recipe intended for all purpose flour and there wasn't quite enough liquid to bring the dough together. So I added the puree to get the right consistency - worked like a charm. I think that some mashed banana or a little applesauce would work as well. This would likely not be necessary if all purpose flour is used.)

I Found This Among My Grandmother's Recipes And I Absolutely Had To Try It. This Is From The Kansas City Star On June 29, 1977 (it's Older Than Me, HA HA!!). I Basically Stuck To The Recipe With Three Minor Changes, That Are Noted.
