  • 1 to 2 cups grated cheese, depending on size of potatoes (provolone, Muenster or Jack - something mild)
  • 1/2 cup sour cream
  • 1 tablespoon freshly chopped Italian parsley leaves
  • Salt
  • Freshly ground black pepper
