- Salt and pepper

- 1 tablespoon fennel seeds
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon butter
- 4 medium sized fennel bulbs, sliced very thinly
- 2 shallots, thinly sliced
- Salt and pepper
- 1 tablespoon chopped parsley leaves
Shrimp:
- 2 tablespoons extra-virgin olive oil
- 5 garlic cloves, peeled and thinly sliced
- 2 shallots, thinly sliced
- 2 jalapeno peppers, sliced in rounds with seeds
- 20 baby shrimp, peeled
- 1 cup white wine
- 1 cup freshly squeezed orange juice
- 4 blood oranges, or navel oranges, segmented
- 1 tablespoon chopped parsley leaves
- 2 tablespoons butter
Polenta:
- 6 cups milk
- 1/4 cup butter
- 2 cups quick cooking polenta
- 2 cups walnuts, toasted
- 1 cup grated Parmesan
- Salt and pepper
- Walnut oil, for drizzling
