Cedar Plank Tuna

Ingredients

Tuna:

  • 1 untreated cedar plank
  • 1 untreated cedar plank cut into 4 pieces
  • 4 (6 to 7-ounce) tuna steaks
  • Salt and pepper
  • 2 tablespoons extra-virgin olive oil plus 2 tablespoons

Fennel:

  • 1 tablespoon fennel seeds
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 4 medium sized fennel bulbs, sliced very thinly
  • 2 shallots, thinly sliced
  • Salt and pepper
  • 1 tablespoon chopped parsley leaves

Shrimp:

  • 2 tablespoons extra-virgin olive oil
  • 5 garlic cloves, peeled and thinly sliced
  • 2 shallots, thinly sliced
  • 2 jalapeno peppers, sliced in rounds with seeds
  • 20 baby shrimp, peeled
  • 1 cup white wine
  • 1 cup freshly squeezed orange juice
  • 4 blood oranges, or navel oranges, segmented
  • 1 tablespoon chopped parsley leaves
  • 2 tablespoons butter

Polenta:

  • 6 cups milk
  • 1/4 cup butter
  • 2 cups quick cooking polenta
  • 2 cups walnuts, toasted
  • 1 cup grated Parmesan
  • Salt and pepper
  • Walnut oil, for drizzling
