Ingredients

  • 1 (15-ounce) can whole black pitted cherries in natural juices, drained
  • 2 rounded spoonfuls sugar -- for fresh cherries only
  • 4 large boneless center-cut pork chops, 1 1/2 inches thick
  • Salt and pepper
  • 2 tablespoons extra-virgin olive oil, 2 turns of the pan
  • 1 large shallot, finely chopped
  • Splash of brandy
  • 1/2 cup chicken stock
  • 2 tablespoons butter, cut into pieces
  • 3 tablespoons fresh mint leaves, finely chopped

Zucchini with Walnuts:

  • 1/2 cup, chopped walnuts -- available in small pouches on baking aisle
  • 2 tablespoons extra-virgin olive oil, 2 turns of the pan
  • 1 tablespoon butter, cut into small pieces
  • 3 medium zucchinis, sliced into disks, 1/-inch thick
  • 1/2 teaspoon nutmeg, freshly grated or ground
  • Salt and freshly ground black pepper
