Chicken With Wine: Coq Au Vin

Ingredients

  • 1 1/2 cups pearl onions
  • 1/2 pound salt pork or bacon, diced
  • 1 whole chicken, cut into 8 pieces
  • 1 cup all-purpose flour
  • 1 tablespoon Emeril's Original Essence, recipe follows
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 pound button mushrooms, quartered
  • 1/4 pound cremini mushrooms, quartered
  • 1/4 pound oyster mushrooms, sliced
  • 1 tablespoon minced garlic
  • 1/2 cup cognac
  • 1 bottle dry red wine (Cote du Rhone or Pinot Noir)
  • 2 cups dark chicken stock
  • Bouquet garni (a few sprigs of parsley, 1 bay leaf, 3 sprigs thyme, and some black peppercorns)
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 2 teaspoons fresh thyme
  • 15 toast points
  • 1/4 cup chopped parsley
