  • 1 bay leaf
  • 1 onion, halved
  • 1 prosciutto bone
  • 1 tablespoons olive oil
  • 1 clove garlic, sliced
  • 2 scallions, sliced
  • 1/2 bulb fennel, coarsely chopped
  • 1 carrot, finely chopped
  • 1 cup canned tomatoes and their juices
  • 1/2 cup shelled fava beans
  • 1 cup shelled fresh peas
  • 3 fresh mint leaves
  • 1/2 bunch fresh thyme, leaves only
  • Black pepper
  • 1/4 teaspoon freshly grated nutmeg
  • 4 cups chopped spinach
  • Caciocavallo, or Parmigiano-Reggiano, for grating
