- 1/2 cup diced celery
- 3 cloves garlic, finely chopped
- 2 tablespoons chopped fresh thyme
- 6 cups day-old country-style bread, cut into 1/2-inch cubes
- 1/2 cup chopped fresh flat leaf parsley
- 3-5 cups homemade chicken stock
- 1 large egg, lightly beaten
- 6 ounces goat cheese, cut into small pieces
- Freshly ground black pepper
