Honey Roast Pork with Apple Chutney

Ingredients

1 cup apple cider vinegar
1/4 cup honey
1/4 cup olive oil
2 cloves garlic, minced
2 teaspoons chopped fresh thyme, or 1/2 teaspoon dried
1 boneless pork loin roast, about 2 pounds
salt to taste
freshly ground black pepper
2 cups low-sodium chicken broth
1 medium onion, diced
2 Granny Smith apples, peeled, cored and chopped
1/2 cup raisins
1 tablespoon sugar
1 teaspoon freshly grated ginger root, or 1/4 teaspoon ground ginger
