For the asian tofu:
2 tablespoons Asian marinade (see recipe)1/4 pound firm tofu, about 1/4 inch thick
1/2 red bell pepper, seeded and julienned
1/2 red onion, sliced 1/4 inch thick
1/2 yellow, summer squash, sliced 1/4 inch thick
1 scallion
1/4 lime
1/2 teaspoon low sodium soy sauce
For the sandwich:
1 slice Herbed Garlic Scented Bread (see recipe)1 tomato, sliced
