Natchitoches Meat Pies with Spicy Buttermilk Dip

Ingredients

DOUGH

  1. 2 1/2 cups all-purpose flour
  2. 2 teaspoons salt
  3. 1/2 cup vegetable oil
  4. 1/2 cup ice water

FILLING

  1. 2 tablespoons unsalted butter
  2. 1/2 pound ground beef chuck
  3. 1 large garlic clove, minced
  4. 1/2 onion, finely diced
  5. 1/4 green bell pepper, finely diced
  6. 1 bay leaf
  7. 1 tablespoon tomato paste
  8. 1/4 teaspoon cayenne pepper
  9. 1/4 teaspoon ground cloves
  10. 1/4 teaspoon chopped thyme
  11. 1/8 teaspoon ground coriander
  12. 1/8 teaspoon ground allspice
  13. Salt
  14. Hot sauce, preferably Tabasco
  15. 1 egg beaten with 2 tablespoons of milk

BUTTERMILK DIP

  1. 1/2 cup mayonnaise
  2. 1/2 cup buttermilk
  3. 1/4 cup plus 1 tablespoon sour cream
  4. 1 1/2 teaspoons celery salt
  5. 1 teaspoon fresh lemon juice
  6. Salt
  7. Hot sauce, preferably Tabasco
  8. 1 scallion, thinly sliced
