Chicken-Liver Mousse with Pickled Red Onion

Ingredients

  1. 2 tablespoons unsalted butter
  2. 2 slices of bacon, cut into 1/2-inch dice
  3. 1 pound chicken livers, trimmed
  4. Kosher salt and freshly ground white pepper
  5. 1/2 small onion, finely diced
  6. 1 small Granny Smith apple—peeled, cored and finely diced
  7. 1/4 teaspoon ground allspice
  8. 1/4 cup Calvados or other brandy
  9. 1 1/2 cups half-and-half
  10. 5 large egg yolks
  11. Toasted baguette slices and Pickled Red Onion, for serving
