PORK
- 2 tablespoons vegetable oil
- 2 pounds trimmed boneless pork shoulder or butt in one piece
- Salt and freshly ground black pepper
- 2 cups chicken stock
- 1 cup mirin
- 1 cup low-sodium soy sauce
- 3 large garlic cloves, smashed
- 1 medium white onion, sliced
- One 1-inch piece of fresh ginger, sliced
- 1/2 teaspoon crushed red pepper
- 4 large eggs
- Steamed rice, for serving
- 2 scallions, thinly sliced
- 1 tablespoon dry mustard dissolved in 2 teaspoons of hot water
