Braised Pork with Ginger-Pickled Shishito Peppers

Ingredients

PICKLES

  1. 1/2 cup water
  2. 3 tablespoons sugar
  3. 1 tablespoon kosher salt
  4. 1/2 cup rice vinegar
  5. 1 tablespoon finely grated fresh ginger
  6. 1/4 pound shishito peppers (see Note)

PORK

  1. 2 tablespoons vegetable oil
  2. 2 pounds trimmed boneless pork shoulder or butt in one piece
  3. Salt and freshly ground black pepper
  4. 2 cups chicken stock
  5. 1 cup mirin
  6. 1 cup low-sodium soy sauce
  7. 3 large garlic cloves, smashed
  8. 1 medium white onion, sliced
  9. One 1-inch piece of fresh ginger, sliced
  10. 1/2 teaspoon crushed red pepper
  11. 4 large eggs
  12. Steamed rice, for serving
  13. 2 scallions, thinly sliced
  14. 1 tablespoon dry mustard dissolved in 2 teaspoons of hot water
