Red-Wine-Braised Beef Brisket

Ingredients

  1. 2 1/2 pounds beef brisket, fat trimmed to 1/4 inch
  2. 2 cups dry red wine
  3. 1 cup red wine vinegar
  4. 4 juniper berries, smashed
  5. 2 teaspoons white peppercorns
  6. 2 carrots, finely diced
  7. 1 celery rib, finely diced
  8. 2 garlic cloves, thinly sliced
  9. 4 large onions, thinly sliced
  10. 1/4 cup canola oil
  11. Salt and freshly ground pepper
  12. 2 tart apples, finely chopped, plus 1/2 tart apple, peeled and chopped, for garnish (optional)
  13. 1/2 cup raisins
  14. 1 bay leaf
  15. 1 teaspoon chopped thyme
  16. 3/4 cup chicken stock or low-sodium broth
