Chicken With Carrots and Olives

Ingredients

  1. 1/4cup extra-virgin olive oil
  2. 1 1/2pounds skinless, boneless chicken thighs, cut into 1/2-inch strips, or skinless, boneless breasts, cut into 1 1/2-inch chunks
  3. Salt and freshly ground pepper
  4. 1/2lemon, seeded and very thinly sliced
  5. 3large carrots, very thinly sliced, preferably on a mandoline
  6. 3large garlic cloves, very thinly sliced
  7. 1tablespoon water
  8. 1teaspoon ground cumin
  9. 1teaspoon sweet paprika
  10. Pinch of cinnamon
  11. 1cup chicken stock or low-sodium broth
  12. 3/4cup mixed, herb-marinated pitted olives (3 ounces)
  13. Chopped roasted almonds and couscous, for serving
