Braised Chicken with Olives and Sweet Peppers

Ingredients

  1. 4 red bell peppers
  2. 4 yellow bell peppers
  3. 1/4 cup plus 2 tablespoons extra-virgin olive oil
  4. 8 chicken drumsticks
  5. 8 chicken thighs
  6. Kosher salt and freshly ground pepper
  7. 2 carrots, cut into 1/2-inch dice
  8. 2 celery ribs, cut into 1/2-inch dice
  9. 3 garlic cloves, halved
  10. 2 teaspoons thyme leaves
  11. 2 large sweet onions, halved and thinly sliced
  12. 2 cups dry white wine
  13. 2 cups chicken stock or low-sodium broth
  14. 1/2 pound large green Italian olives, such as Castelvetrano or Cerignola
  15. 2 tablespoons chopped flat-leaf parsley
  16. Crusty bread, for serving
