Curried Mixed Vegetables

Ingredients

  1. 2 large carrots, cut into 1/4-inch dice
  2. 1 medium Yukon Gold potato, peeled and cut into 1/4-inch dice
  3. 1 medium zucchini, cut into 1/4-inch dice
  4. 2 medium onions, cut into 1/4-inch dice
  5. 2 long red chiles, seeded and minced
  6. 2 tablespoons ground coriander
  7. 1 teaspoon ground turmeric
  8. 3 tablespoons vegetable oil
  9. 2 teaspoons minced fresh ginger
  10. 2 medium tomatoes, diced
  11. 1/2 cup cilantro, very coarsely chopped
  12. 1 cup shelled frozen edamame (soybeans)
  13. 1 cup plain, nonfat Greek yogurt
  14. 1 tablespoon fresh lemon juice
  15. Kosher salt
  16. 4 whole-wheat pocketless pitas, warmed
