- 1 1/2 cups crustless 1-inch cubes of peasant bread
- 1 cup Greek whole-milk yogurt
- 3/4 cup marcona almonds (4 ounces) (see Note)
- 1/2 pound seedless green grapes
- 1/2 large seedless cucumberpeeled, seeded and coarsely chopped
- 1/4 cup plus 1 tablespoon extra-virgin olive oil, plus more for drizzling
- 1/2 teaspoon sweet smoked paprika (Pimentón de la Vera)
- Salt and freshly ground white pepper
