Ingredients

  1. 1/2 cup dried porcini mushrooms (1/2 ounce)
  2. 6 cups water, 1 cup lukewarm
  3. 2 tablespoons extra-virgin olive oil
  4. 1 large red onion, finely chopped
  5. 1 celery rib, finely chopped
  6. 1 carrot, finely chopped
  7. 2 parsley sprigs, finely chopped
  8. 2 garlic cloves, finely chopped
  9. 1 tablespoon tomato paste
  10. One 16-ounce can tomato puree
  11. 2 tablespoons chopped basil
  12. 2 zucchini, cut into 1/4-inch dice
  13. Salt and freshly ground pepper
  14. 1/4 cup freshly grated Pecorino Romano cheese
